Recipe: zucchini cordon bleu low carb
Ingredients for 2 people (8 small cordon bleu):
2 medium zucchini
Gouda in slices
Sliced cooked ham
6 tbsp flaxseed flour
50 g almonds, ground
50 parmesan, grated
Wash the zucchini, cut off the ends, cut in half and cut into 16 equal-sized 5
Cut mm thick slices.
Cut the Gouda and the cooked ham into suitable slices and add 1
Place the slice between 2 zucchini slices.
Whisk the eggs in a deep plate and season with salt and pepper.
Put the flax flour in another deep plate.
Mix the ground almonds with the grated Parmesan and also in one
give deep plate.
The zucchini cordon bleu first on all sides in the golden flax, then in that
whisked egg and finally roll in the almond-parmesan mixture.
Heat the coconut oil in a pan and the zucchini cordon bleu over medium temperature
Fry both sides for 4 minutes each until crispy.
If you don’t have flax flour you can also use almond flour.
